Bolivian Recipes: Lechon al Horno

Baked pork ribs in white wine sauce. A delicious holiday meal made in Bolivia.

INGREDIENTS FOR LECHON AL HORNO

  • 1.5 kg pork ribs with fat  
  • ½ L water  
  • ½ teaspoon pepper  
  • ½ teaspoon cumin  
  • 2 teaspoons of salt  
  • Rosemary to taste  
  • 1 cup of oregano  
  • 2 cloves of garlic  
  • ½ cup white wine 
  • Lemon juice or vinegar  
  • Aji (optional)

PREPARATION OF LECHON AL HORNO

  • 1. Marinate the meat the night before.  
  • 2. Wash and dry the meat.  
  • 3. For the marinade, mix water, salt, cumin, pepper, wine, and wine. 
  • Bake for 1 ½ hours at 180-200 degrees Celsius. 
  • 5. Heat oil to fry the meat 
  • 6. Side dishes: Potatoes, sweet potatoes, baked banana.
