Bolivian Recipes: Llajua –
Salsa Picante Bolivian
Llajhua (also: Llajwa or Llahua) is a spicy chili sauce that is a must-have in almost every meal in Bolivia. The main ingredients are Locoto, tomatoes, salt, and optionally other ingredients.
INGREDIENTS FOR A BOLIVIAN LLAJUA

8 medium-sized tomatoes or 1 large can of peeled tomatoes
- ½ to 1 bell pepper (green or yellow)
- 1 small onion
- 4-5 Fresh locotosharp peppers, chilies or jalapeños
- 10-20 g Locoto powder
- 1 teaspoon of black pepper (coarsely ground) or hot paprika.

2 tbsp sunflower oil
- Juice of a lime
- 1-2 tsp tomato paste
- approximately 1 tsp (level) salt
- approx. 1 tsp sugar
- 1 tbsp (heaped) basil and parsley (preferably freshly chopped)
- ¼ to ½ tsp pepper (from the mill)
- 1 tsp oregano
- Possibly a few drops of water
PREPARATION OF A BOLIVIAN LLAJUA
- 1. Wash bell peppers and chili peppers (or hot peppers or jalapeños), chop them into tiny pieces, removing the white flesh, seeds, and stems.
- 2. Wash tomatoes (if not from a can), chop them into tiny pieces, removing the green stem end.
- 3. Peel the onion and chop it into tiny pieces.
- 4. Add all ingredients to the blender or the container for the hand blender, and blend for about 5 to 10 seconds. Be careful to avoid splashes in the eyes. Done!
