Maiz Mote is dried white corn and one of the most popular side dishes in Bolivia. The thick corn kernels are notably larger than those of the corn varieties known in Germany.
The preparation is very simple: Soaked overnight in water, the Mote corn becomes soft again and can be cooked for 45-60 minutes. A tasty side dish is ready.

Mote is served as a side dish with almost every meal in the valley regions – for example, with Chicharrones de Cerdo or grilled fish. "Mote" is not only the term for cooked corn, but it is generally used to refer to all cooked and unseasoned grains.
