Tunta: White potatoes from Bolivia

Tunta are dehydrated potatoes that, thanks to a special drying technique, retain their characteristic white color and therefore achieve a longer shelf life. They are sometimes also referred to as Chuño Blanco.
They are the classic accompaniment for the famous Sajta de Pollo and a very special Bolivian specialty.
Before preparation, the tuntas must soak in water for several hours, during which they regain their original size. Afterwards they can be cooked as usual.

The preparation of Tuntas

Step 1: Soak the Tuntas in water overnight

Step 2: Tear the soaked Tuntas into small pieces and boil in fresh water for 30-40 minutes.
